I wanted to write a cookbook that provided a large variety of chicken-based chili recipes that would be suitable for a wide range of occasions. The 30 dishes included with this book cover heavier chunky chilis as well as light 'soups' that fall into the category. You will find some recipes with less traditional ingredients like curry powder, cornmeal, and chorizo sausage because I believe that chili can cover a wide range of flavors, seasonings and meat combinations. One thing I love to do with these recipes is to experiment with different garnishes, so I have included some of my favorites in the introductions for each entry. I hope you enjoy making these beautiful meals as much as I have, and you do some experimenting of your own.
